Hand-harvested from the sap of ancient palm trees deep in tropical rainforest highlands in Sri Lanka, it is collected by traditional craftspeople practising a 2,000-year-old art. The palm nectar is slow-cooked over open wood fires in small village batches until it sets naturally unrefined, pure and rich with a deep smoky butterscotch complexity that no commercial sweetener could ever replicate.
Sourced from a small dedicated producer whose operation supports over 40 local families. Every batch free from added refined sugar and preservatives. Collected by hand, processed close to where it is harvested, and chosen because it is simply the finest available.
It carries a lower glycemic index than refined sugar, retains natural minerals including potassium and magnesium, and has long been valued across ancient traditions for its digestive and restorative properties.
